Eggs in a Nest

A word to the wise. If you ever check the weather and realize that there may be a snow storm coming your way, it is always a good idea to go grocery shopping before the snow hits. Otherwise you will end up like us, with an empty fridge and hungry bellies. Although it was a treat to watch the snow fall outside the window last night, by the time we were ready for dinner, we found ourselves with limited supplies. Lucky for us, the ingredients we did have, happened to create one of my favorite dishes of all time.... eggs in a nest.

This simple, yet flavorful meal requires minimal ingredients and time. Serve it with rice, and you have yourself a very filling dinner. Serve it with toast, and you can even satisfy those in your family that don't like breakfast foods... yes, they do exist. You can make it for breakfast. Or lunch. Or dinner.... or all three of those meals if you so desire.  The swiss chard cooks up so well, you almost forget you are eating veggies. Almost. 

Eggs in a Nest
~Serves 2~
Time: 30 minutes (or less)

Ingredients: 
~ 1 Tbsp olive oil
~1 sm onion chopped
~ 1/2 a bunch of swiss chard (4-5 leaves): 
       -stems chopped into fine pieces, 
       -leaves ripped into large chunks 
~ 4 eggs
~ pinch of salt and pepper to taste
~ a little cheese if you wish (white cheddar or mozzarella) 

Directions: 

Heat the olive oil in a large skillet over medium-high heat. Add the onion and swiss chard stems and cook for 5 minutes, or until tender. Add the swiss chard and continue cooking until the leaves begin to wilt. 


 Crack the eggs over the chard, cover and cook until the eggs are to your pleasing. I prefer to cook them until the whites of the eggs are firm and the yolks are covered with a sheet of white (see picture). Season with salt and pepper and sprinkle a little shredded cheese. Enjoy!
